Since South India has green vegetation in abundance, the ingredients they use in their food is most of the time fresh. When it comes to Tamil cuisines specifically, there is much more to what the state brings to the table than just Dosa and idli (not that they are bad, they are delicious in their own right). To start with, there is the soupy and tangy rasam which is made from tamarind and is absolutely lip-smacking, especially when you have it with lemon rice.

The sambar is a famous accompaniment of every Dosa plate sold all over the state. Made with tamarind as a base and topped with vegetables like brinjal and drumstick, this curry is found in every Tamilian’s house. To cater to your sweet tooth, there is paruppu payasam, made after roasting moong dal and slowly cooked in a pressure cooker. A little bit of jaggery adds to its sweet flavour.
